What I ate Wednesday

Hey, hey! How are you doing today? I’m temporarily working from home full time, so I’m trying to avoid looking like a sloppy nightmare by getting dressed a few times each week.  Today is one of those days!  It’s a bit weird for me to wear real clothes just to sit in my office all day, but my cousin came over for lunch so I had a good reason today.

It’s been awhile since I’ve done a WIAW, so let’s chat food.  Of course, I forgot to take a picture of my breakfast, but it was my classic stand-by: scrambled eggs with hash cooked in butter, and coffee with organic half + half and collagen peptides.  This breakfast is my go-to for a reason! It fills me up and keeps me going all morning.  When I skip breakfast or drink a smoothie for breakfast, I feel hungry all day; like I’m trying to catch up after missing a meal.  This means it’s super important for me to have a go-to breakfast that I can whip up to start my day right.

Lunch was takeout from my favorite Mexican restaurant, Rey Azteca with my cousin and goddaughter.  My favorite thing to get from Mexican restaurants is chicken fajita because it’s super simple and I can skip the tortillas to make it gluten free.  This one came with refried beans and guacamole.  I don’t go out of my way to eat beans, but I don’t have too much difficulty digesting them, so I don’t mind when it comes with meals like this.  I also snacked on some of the tortilla chips and salsa that came with our order.


Dinner was shepherd’s pie, but instead of mashed potatoes I used mashed cauliflower, and I added some frozen spinach to the meat for extra veggies.
