Today is a great day; There’s only one more work day left before my vacation starts on Friday, and it’s my mom’s birthday! My mom is literally my # 1 fan. She believes in me the way moms do, and I don’t know what I would do without her.
I know the ‘what I ate’ post craze may be outdated, but I’m new to blogging, so it’s new to me! I doubt I’ll do it consistently because I almost never remember to take pictures of my food before I start eating, but I thought it would be a fun to throw these in every now and then.
Breakfast was my go-to scrambled eggs and hash browns cooked in grass fed butter. I could (and have) eat this for breakfast every day for weeks without getting tired of it. I also stopped at Starbucks for an Iced Flat White with almond milk. It’s my go-to coffee order this summer because as much as I enjoy hot coffee, it’s just too hot for that when I’m out in the heat and humidity.
Lunch is leftovers from last night’s dinner: steak, roasted potatoes, and green beans. I’ve heard rumors of people who don’t like to eat leftovers… I love leftovers. I couldn’t imagine my life without them because that would likely mean I’d have to cook a lot more than I already do. I snacked on an Epic Lamb bar in the afternoon because I was getting hungry and knew I wouldn’t make it to dinner time. I don’t have a pic because by the time I thought to take one, the bar was half gone!
Dinner was hamburger hash with some organic ketchup. I know, I know, more potatoes! I probably could’ve made more of an effort to put veggies into my meals today, but I wasn’t really thinking about it and some days, you just want carbs, ya know?
